At Shimbashi Soba, the Soba (buckwheat) seeds are ground by a stone mill every morning to ensure the freshness. After making soba flour, our highly-skilled Soba Chefs will make a dough mixing with water and wheat flour, then knead, roll, press, fold and cut the dough to make Soba (buckwheat noodles) . Our soba is freshly made and cooked on the spot every day.
We believe that Soba is an ultimate health food which is rich in vitamins, minerals, fiber and natural compounds.
