The concept of Spruce was formed out of the love of wholesome and unpretentious Modern American cuisine served with the warm hospitality that has become a trademark for Spruce. The first Spruce which opened in March 2009 at Phoenix Park along Tanglin Road, met with success and became a popular meeting place among friends. The popularity of Spruce led to the opening of the second branch along Upper Bukit Timah Road in July 2012. In keeping things exciting, Spruce continues to evolve, making dining experiences invigorating with its seasonal offerings and the occasional wine dinners often favored by its guests. Built in 1956, the state-owned fire station at Upper Bukit Timah with its distinctive red doors is now home to the second Spruce restaurant. Following a complete overhaul of the colonial style building, Spruce At Fire Station now boasts a chic 3,000 sq ft dining area with an indoor capacity of 150 people. A stone’s throw away from Bukit Timah Nature Reserve, the restaurant boasts dramatically soaring glass windows that allow plenty of warm natural light during the day and serene views of nature at night. Ahi Tuna Tartar - 120 grams of sashimi grade raw tuna mixed with a special vinaigrette and served with sliced avocado and toasted ciabatta bread Boston Clam Chowder - Cream based soup with fresh clams, potatoes, onions and chives served with parsley butter crouton. Signature Salad - Signature salad of fresh corn, dates, almonds, Momotaro tomato, cucumber, avocado mixed greens and chevre cheese. Dressing is champagne vinaigrette. Spruce Burger - Our house specialty, the burger is 160grams of freshly grounded Australian beef chuck. Seasoned with salt and pepper and cooked on a flat top grill. Bun is homemade black & white sesame bun made fresh daily. Burger topped with havarti cheese and 7 condiments. Served with our hand cut chips Prawn Pasta - Our signature pasta of fresh prawns sautéed with garlic, white wine and zucchini sauce that is bright green served with orecchiete (little ear shaped pastas). There are thin slices of zucchini in addition to the pureed zucchini skins that are used to make the sauce. Tenderloin Steak Frites - Our steak is from Australia and we use beef tenderloin, which is very lean and tender naturally. We grill the steak in a seasoning of salt, pepper and mushroom powder. It is served alongside our homemade chips, a small mixed salad and béarnaise sauce which is a tarragon flavored hollandaise. Each steak is 200grams. Baked Ginger Date Pudding - This is our rendition of the quintessential British sticky toffee pudding. Here we use ginger and dates to make our cake and a chocolate and toffee sauce that we serve with a scoop of vanilla ice cream.
