Sushi Mitsuya is a niche Japanese Sushi restaurant focused on providing an exclusive and bespoke dining experience, taking the art of Omakase to heights as yet unexplored. The intimate hinoki-wood sushi counter will be helmed by Head Chef, Ryosuke Harada.
Chef Ryosuke Harada began his foray into the art of sushi-making at the tender age of 18. He spent 8 years honing his skills in Tokyo before venturing to Hong Kong, where he worked in Sushi HIRO. While in Hong Kong, Chef Harada learnt to speak cantonese so as to better communicate with his customers - a testament to his service-oriented nature. In 2011, he returned home to set up Sushi SORA at the five-star Mandarin Oriental, Tokyo. As the Sous Chef, he was once again reacquainted with the latest trends in the competitive sushi scene. It is hence with immense pleasure that we welcome Chef Harada to Singapore. He looks forward to serving Singapore diners the finest sushi in the ’Edo-mae’ tradition, interlaced with his innovative creations known affectionately as ’Harada-style’ sushi.
